Agreeable red wine made from the vinification of Croatina grapes grown on the sun-drenched hills of Cisterna d’Asti. The Croatina vine and its wine were once known as “Bonarda di Cisterna” and vinified as Piedmont Bonarda, but today the region of origin has been set as the name of the designation.
The aptitude of the Cisterna hills to the cultivation of this variety allows us to produce a wine of great structure and personality.
Grape variety: Croatina
Geographical Location: In the municipalities of Cisterna d’Asti and Canale (CN).
Vineyard characteristics: Hillside vineyards of varying age. Sandy soil. The vines are trained with the Guyot system.
Vinification: Pressing and destalking of the hand-picked perfectly ripe grapes.
Fermentation with maceration on the skins for a few days. Drawing off and immediate control of the malolactic fermentation.
Maturation and aging: The new wine is racked several times and stored in tanks for 12 – 14 months, after which it is bottled and marketed as SUPERIORE.
Organoleptic characteristics: Deep ruby colour caressed by vivid purple hues, fruity fragrance with notes of plum jam and red fruits; winey and harmonious flavour, the wine is full-bodied but supple, persistent on the palate and slightly tannic.
Accompaniments: Typical Piedmont pasta dishes such as Agnolotti and Risotto as well as with meat mail courses and fatty cold cuts.
Served at 18 – 20 °C.
