Has always been considered the wine of friendship and ideal in company.

The particular composition of the soil decides whether the dolcetto of these vineyards, as well as a remarkable structure, has a fruitiness and a wealth of gustatory sensations.

 

Grape variety: Dolcetto

Geographical Location: In the municipality of Canale (CN).

Vineyard characteristics: Hilly well exposed vineyards of variable age. The soil is sandy. The vines are trained with the Guyot system.

Vinification: Pressing and destalking of the manually harvested and perfectly ripe grapes.

Fermentation with maceration on the skins for a few days. Drawing off and immediate control of the malolactic fermentation

Maturation and aging: The new wine is racked several times and stored in tanks for 4-6 months, then the wine is bottled and marketed. Part is kept in tanks for bulk sale.

Organoleptic characteristics: Bright ruby red colour, winy and pleasant bouquet; dry and aromatic flavour of moderate acidity.

Accompaniments: Appetizers, cold cuts, pasta, white meats, mushrooms based dishes and fresh cheese.

Served at 16 – 20 °C.
