A pleasing dry white wine of ancient origin that is claiming its place on the tables of gourmets for its original and unmistakable aromas.
Its ideal environment is in the dry sands of sun drenched hills that, by slowing the vegetative vigour, are able to ripen its golden bunches completely.
Grape variety: Favorita
Geographical Location: In the municipality of Canale (CN).
Vineyard characteristics: Hilly well exposed vineyards. The soil is sandy, dry, and rich in minerals. The vines are trained with the Guyot system
Vinification: Pressing of the manually harvested and perfectly ripe grapes immediately on their arrival to the winery. Must fermentation without marc for a few days in stainless steel tanks, after which it cooled and fined to free it from any impurity.
Maturation and aging: To keep the freshness and aromas intact the wine is stored in steel tanks for 3/4 months, and bottled.
Organoleptic characteristics: Intense straw yellow colour; delicate and characteristic aroma; dry flavour with a bitter aftertaste.
Accompaniments: Excellent as an aperitif. Appetizers and seafood dishes enhance its features and is also used for cooking.
Served at 8 – 10 °C.
