Vino Spumante di Qualità Brut
Grape variety: Arneis.
Location: Canale (CN) Piedmont, Italy.
Vineyard characteristics: Well-exposed and hilly vineyard. The soil is sandy, dry, and rich in minerals. The vines are cultivated with the Guyot system.
Vinification: Pressing of the manually harvested and perfectly ripe grapes immediately on their arrival in the winery. Only the first pressing must is used. Then, the must ferments without pomace for some days in controlled steel tanks, after which it occurs the sparkling process “Metodo Classico”.
Maturation and aging: Refermentation in bottle and lees suspension for 12-18 months, “dégorgement a la glace” and 4 months-refining in lying bottles before being sold.
Organoleptic characteristics: Straw yellow colour; delicate and fragrance with a dry and harmonic flavour.
Served at 8-10°C.
