Nebbiolo has always been the tradition, culture and rural pride of the Roero hills. A “red” of noble origin obtained from the vinification of the Nebbiolo grape. The sun drenched hills of this land give this wine its unmistakable fragrances and flavours; excellent features that place it among the aristocracy of the great wines.
Grape variety: Nebbiolo
Geographical Location: Vigneto Pace in the municipality of Canale (CN).
Vineyard characteristics: Well exposed hillside vineyard. The soil is dry, sandy and rich in minerals. The vines are trained with the Guyot system.
Vinification: Pressing and destalking immediately upon the arrival of the perfectly ripe hand-picked grapes in the wine cellar. Fermentation with maceration on the skins for a few days. Drawing off and immediate control of the malolactic fermentation.
Maturation and aging: The new wine is racked several times and stored in tanks for 12 – 14 months, after which it is bottled and marketed.
Small amounts are aged in barrels for about six months, bottled and marketed.
Organoleptic characteristics: Ruby red colour with garnet hues that become more apparent over the years; distinctive aroma with hints of strawberries and cherries, harmonious and tannic flavour.
Accompaniments: Subtle wine ideal with roasts, game, grilled meats, pasta dishes and mature cheeses.
Served at 18 – 20 °C.
