Typical red wine, obtained from the vinification of Croatina grapes, cultivated on the sunny hills of Cisterna d’Asti. Once Croatina vineyard and the related wine were known as “Bonarda di Cisterna” and vinified as Piemonte Bonarda, but today is has been recognized a terrory with its name. The vocation of Cisterna hills to the cultivation of these grapes allow us to produce a wine of great structure and personality. This wine ages for 12 months in barrique and tonneaux.
Grape variety: Croatina.
Geographical location: Cisterna (AT) Piedmont, Italy
Vineyard characteristics: Well-exposed and hilly vineyards of variable age. The soil is sandy. The vines are cultivated with the Guyot system.
Vinification: De-stemming and crushing of the manually harvested and perfectly ripe grapes. Fermentation with maceration on the skins for 12-15 days. Racking and immediate control of the malolactic fermentation.
Maturation and aging: Stored in barrique for 12 months in barrique and tonneaux, then bottled.
Organoleptic characteristics: Intense ruby red colour, with purple tints. Fruity fragrance with notes of plum jam and slightly tannic.
Served at 18°C.
Accompaniments: Typic Piemont pasta, like risotto, to meat dishes and cold cuts. It is suitable for the whole meal.
