Dolcetto
It has always been considered the wine of friendship and ideal in company. Thanks to the particular composition of the soil, this dolcetto has not only a remarkable structure but it is also vinous and rich in gustatory sensations. It has a bright ruby red colour and an harmonic flavour and with moderate acidity.
Grape variety: Dolcetto.
Geographical location: Langhe (CN) Piedmont, Italy
Vineyard characteristics: Well-exposed and hilly vineyards of variable age. The soil is sandy. The vines are cultivated with the Guyot system.
Vinification: De-stemming and crushing of the manually harvested and perfectly ripe grapes. Fermentation with maceration on the skins for 6-8 days. Drawing off and immediate control of the malolactic fermentation.
Maturation and aging: Stored in steel tanks and vitrified cement for 4-6 months, then bottled.
Organoleptic characteristics: Bright ruby red colour, vinous and pleasant fragrance; dry and aromatic flavour of moderate acidity.
Served at 18°C.
Accompaniments: Appetizers, cold cuts, pasta, whitemeats, mushrooms based dishes and fresh cheese.
