Bonarda

An agreeable, lively and young red wine typical of Cisterna d’Asti, produced from bonarda grapes). The “Bonarda wine” was already present in the cellars of the town’s castle in the nineteenth century It is therefore no coincidence that the Bonarda became a cultural matter for Cisterna, with interesting applications in the kitchen as well (bonarda chutney). The sandysoil, rich in minerals, of these hills allows us to produce an unmistakable Bonarda, slightly lively.
Grape variety: Bonarda.
Geographical location: Cisterna d’Asti and Canale (CN) Piedmont, Italy
Vineyard characteristics: Well-exposed and hilly vineyards of variable age. The soil is dry, sandy and rich in minerals. The vines are cultivated with the Guyot system.
Vinification: De-stemming and crushing of the manually harvested and perfectly ripe grapes. The fermentation of the must remains in contact with the skins for 5-7 days; drawing off and control of the malolactic fermentation Refermentation in autoclave till 0,8 bar of pression.
Maturation and aging: Stored in tanks for 6-7 months, 50% in vitrified cement and 50 in steel tanks for a refermentation then the slightly lively wine is bottled.
Organoleptic characteristics: Intense ruby red colour; vinous and fruity fragrance, with a full and harmonic flavour, slightly lively and agreeable.
Served at 16-18°C.
Accompaniments: It accompanies cold appetizers, pasta dishes and red and white meats very well. Very agreeable between meals.
