Pleasant dry white wine produced from the most ancient and enchanting white grape variety of the Roero region: the Arneis. The sandy, dry, and mineral rich soil gives this wine personality and unmistakable quality characteristics, therefore over the years it has carved out an important space in a land of prestigious red wines. It is produced from arneis grapes and it takes the name from the hills where the vineyards are situated, “Pace”.
Grape variety: 100% Arneis.
Geographical location: Canale (CN) Piedmont, Italy.
Vineyard characteristics: Well-exposed and hilly vineyard. The soil is dry, sandy and rich in minerals. The vines are cultivated with the Guyot system.
Vinification: Using of the grape must, got from the pressing of the manually harvested and perfectly ripe grapes immediately on their arrival in the winery. Must fermentation without pomace for 15 days in controlled steel tanks, after which it is clarified to free it from any impurity.
Maturation and aging: To keep the freshness and fragrance, and to increase the structure the wine remains in steel tanks on lees for 3-4 months, and then bottled.
Organoleptic characteristics: Intense straw yellow colour with green highlights; very intense, sophisticated and sweetish aroma with sensations of fresh fruits; dry flavour, with a marked savouriness and freshness.
Served at 8-10°C.
Accompaniments: A fine and sophisticated wine that can be served as an aperitif; ideal with hors d’oeuvres, pasta and fish dishes.
