Grape variety: Grignolino.
Location: Cisterna d’Asti (AT) Piedmont, Italy.
Vineyard characteristics: Hilly vineyards, with sandysoils and different ages. We use the Guyot training system.
Vinification: Direct pressing of the manually harvested and perfectly ripe grapes. Fermentation for 6-8 days; then, transfer and clarification, so as to reach the transparency of thewine.
In order to mantain the freshness and the perfumes, we decided to avoid the malolactic fermentation.
Maturation and aging: Stored in steel tanks and vitrified cement for 3-4 months, then bottled.
Organoleptic characteristics: Light ruby red colour; pleasant and delicate perfume, that reminds to the flowers in the field; dry taste, soft to the palate.
Served at 16-18°C.
